Maceration at low temperature, delicate pump-overs over a long period, malolactic fermentation during alcoholic fermentation. Rests for over a year in new French oak barriques. Blending by selecting best barriques, then evolution in stainless steel 6–8 months. Aged in bottle before release for no less than 12 months. 1 year in French oak, subsequently 1 year in bottle.
